From the delicate balance of spices to the use of fresh, local ingredients, every dish tells a story. At Juju, our chefs have meticulously crafted a menu that brings the authentic taste of Kashmir to your plate, reimagined with our signature touch.
Our Special Festival Menu Highlights:
Appetisers:
- Kandhari Paneer Tikka: Soft paneer grilled with sweet prunes and tangy pomegranate.
- Naduru Ki Seekh: Lotus stem kebab served with mooli walnut ki chutney.
- Kokur Kanti: Chicken cubes tossed with chilies, onions, tomatoes, and Kashmiri spices.
- Wazan Fish Tikka: Seabass cubes marinated with yoghurt, fennel, green chilli and spices.
Main Courses:
- Mutton Marchwangan Korma: Mutton cooked in a rich gravy made with Kashmiri chilli, cashew nut and spices.
- Mutton Kofti Curry: Mince mutton kebab cooked in a Rogan Josh gravy.
- Chicken Dhamwal Korma: Chicken with bone simmered in yoghurt, fried onion, cashew nut and coriander.
- Ru Gan: Kashmiri style fish curry with radish and spinach.
- Kashmiri Rajma: Kidney beans simmered and cooked with ginger, garlic, Kashmiri chilli, tomatoes.
- Dum Aloo: Fried baby potato cooked in a yoghurt base gravy.
- Paneer Kaliya: Paneer pieces cooked in rich turmeric, fried onions and cashew gravy.
Kashmiri Breads / Rice Dishes:
- Sheermal: Soft bread made with flour, milk, sugar and saffron.
- Baqarkhani: Spiced flat bread made with flour, sugar, salt, cardamom, nigella seed.
- Chaman Roti: Whole wheat bread with salt, yeast and milk.
- Kashmiri Pulao: Basmati rice cooked with fruits, nuts and cottage cheese.
- Yellow Rice: Traditional turmeric base rice with tempering of ghee.
- Chicken Yakhni Pulao: Chicken leg and basmati rice cooked in aromatic spices served with raita.
Desserts:
- Gud Khajoor Ka Halwa: Dates with jaggery, ghee and dry fruits.
- Kashmiri Apple Kheer: Milk based sweet with grated apples, chopped dry fruits and Kesar.
